For 10 months of the year, the distillery only produces sake and shochu and their whisky production occurs in the two remaining months. Akashi Single Malt is a marriage of their single malt and three different whiskies a 7, 5, and 4-year old that have been aged in three different casks, namely Spanish Sherry, new American oak, and ex-bourbon. Bottled at a pleasant 92 proof, it offers light fruit aromas with malt, spice, and apricot on the nose while the palate is light and soft with touches of red apples, toffee, and local herbs.
