Description
Mezcal is a unique spirit with 5 centuries of rich history and tradition behind it. Montelobos Mezcal honors those traditions with a lineup of artisanal spirits celebrating terroir. Maestro Mezcalero Aarn Alva crafts their Mezcal Ensamble at Palenque del Tentzo, San Nicols Huajuapan, Puebla. It starts with papalote, espadin, and tobal agaves which are free of pesticides and herbicides. The pias (hearts) of the agaves are harvested by the jimadores with machetes and roasted in underground volcanic stone pits, which takes between 5 and 7 days. After the cooked agaves are cut and shredded, the juice is left to ferment in open-air pine vats, which takes between 7 and 10 days. Then, the liquid is double-distilled in copper stills. The resulting spirit is complex with contrasting aromas and flavors of caper, nutmeg, pink pepper, cooked agave, citrus, and smoke.
