3 expressions are in the Peloton de la Muerte lineup: the Criollo, Espadin, and Pechuga. The Criollo is crafted by Maestro Mezcalero Hctor Obregn in Mazatln, Guerrero. It’s made with the wild maguey criollo agaves, a cousin of the espadin that is native to the Guerrero region and is rarely used in production. After being slowly cooked, the agaves ferment in open-air vats for 5 days before being distilled in an Arabic and a Filipino-style still with a wood hat.
