Description
Avila is crafted in the Morelos region of Mexico using 100% pure agave by families with a rich distilling tradition. The spirit is the middle ground between mezcal and tequila, as it combines roasting and steaming. The naturally-pollinated agaves come from a region that hasn’t been over-farmed, where they grow around 3,000 feet above the sea level, in the warm and humid climate of Morelos.The pias are roasted for 48 hours in a pit, filled with volcanic rock from the local volcano. Half of the time it is covered, half uncovered. A tube is inserted into the pit during this process, reducing the smokiness of the spirit. They combine roasting with the more modern steaming method that is traditionally used in tequila-making, employing an autoclave oven. The steamed and roasted pias are combined for the fermentation stage, creating a unique flavor.The spirit is then triple distilled, making for a smooth, super-clean, and premium end result.
