Evan Batt and John Straits are both industry veterans who started talking about starting their own business in 2010. Together with some friends, they started making their vision a reality, procuring equipment, and searching for a suitable distillery site. Western Son Distillery was born and Western Son Vodka was launched in 2011. The distillery is located in Pilot Point, Texas, in a 30,000-square-foot building that was once The Old Panty Factory. The distillery has quickly grown with the current lineup consisting of several flavored vodka expressions, as well as 2 gins and a single-barrel bourbon whiskey. A portion of the profits is donated to the Peter Burks Unsung Hero Fund, a non-profit organization that collects and delivers care packages to the military.The vodka that serves as the base for Western Son’s numerous expressions is distilled from a mixture of Midwest and Texas yellow corn. Naturally gluten-free, the corn is milled and mixed with reverse osmosis water from a local aquifer and cooked. Then the mash is fermented at 75F, letting the yeast convert the sugars into alcohol. The first distillation takes place in a copper pot still, while all the subsequent distillations take place on a column still with 13 perforated copper plates.
