Zignum means “the tip of the spear”. Celebrated as a smooth, refined mezcal, Maestro Mezcaleor follows an eco-friendly approach from field to bottle to produce Zignum Mezcal. The production of mezcal begins once the agave plant is ready for harvest and its pias or agave hearts are shaved. These are then cooked, ground and fermented. After the alcohol obtained is distilled, it can rest in wooden barrels. For Zignum Reposado, this means ageing American white oak barrels for at least 8 months. It boasts added complexity and character as its maturation period exceeds the required minimum time.
